Ingredients for Tomato Rice:

2 cups of cooked basmati rice.

1 Onion

1 small finely chopped tomato.

½ cup Tomato Puree.

1 tbsp tamarind pulp.

1 teaspoon Cumin Seeds.

1 teaspoon mustard seeds.

2 Dry Chillies.

1 Star Anise.

1 Bay Leaf

Some Curry Leaves.

¼ teaspoon turmeric powder.

1 teaspoon Red Chilli Powder.

1 teaspoon Cumin Powder.

1 teaspoon of Coriander Powder.

Salt according to taste.

2 tablespoons oil.

Some chopped coriander.

How to make tomato rice:

1. First, heat the oil in a nonstick pan. When the oil is hot, add cumin, mustard and let them splutter.

2. Now add dry chilies, star anise, and bay leaves and mix well, now add onion, curry leaves and stir well and cook till the onion becomes soft.


3. Add tomato puree, turmeric powder, red chili powder, coriander powder, salt and tamarind pulp to it, mix all the ingredients well, and cook for a few minutes.

4. Add basmati rice to it, mix it gently with light hands, and cook for about 3 minutes.

5. Now garnish it with green coriander and enjoy tomato rice.
